- 1 (14 ounce) can sweetened condensed milk
- 1 (8 ounce) package cream cheese, softened
- 1 (12 ounce) container frozen whipped topping, thawed
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups mixed berries (strawberries, blueberries, raspberries), fresh or frozen
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- Fresh mint leaves
- Extra berries, for garnish
Instructions
- In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice. Bring to a simmer over medium heat, stirring occasionally. Cook for 57 minutes, or until the berries have softened and the sauce has thickened slightly. Let cool completely.
- In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sweetened condensed milk and beat until well combined. Stir in the vanilla extract and salt.
- Gently fold in the thawed whipped topping until the pudding is light and airy. Be careful not to overmix.
- In a serving dish or individual cups, layer the pudding base with the cooled berry compote. Repeat the layers.
- Cover and refrigerate for at least 2 hours, or until the pudding is set.
- Before serving, garnish with fresh mint leaves and extra berries, if desired.
- Serve chilled!
