  • 1 (8 ounce) package cream cheese, softened
  • 1 (12 ounce) container frozen whipped topping, thawed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups mixed berries (strawberries, blueberries, raspberries), fresh or frozen
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • Fresh mint leaves
  • Extra berries, for garnish

Instructions

  1. In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice. Bring to a simmer over medium heat, stirring occasionally. Cook for 57 minutes, or until the berries have softened and the sauce has thickened slightly. Let cool completely.
  2. In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sweetened condensed milk and beat until well combined. Stir in the vanilla extract and salt.
  3. Gently fold in the thawed whipped topping until the pudding is light and airy. Be careful not to overmix.
  4. In a serving dish or individual cups, layer the pudding base with the cooled berry compote. Repeat the layers.
  5. Cover and refrigerate for at least 2 hours, or until the pudding is set.
  6. Before serving, garnish with fresh mint leaves and extra berries, if desired.
  7. Serve chilled!
