- ½ cup unsweetened cocoa powder

- ¼ teaspoon salt
- ½ cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup grated zucchini, squeezed of excess moisture
- ½ cup grated carrots
- ½ cup chocolate chips (optional)
- 4 ounces cream cheese, softened (optional for swirl)
- 2 tablespoons granulated sugar (optional for swirl)
- 1 large egg yolk (optional for swirl)
- ½ teaspoon vanilla extract (optional for swirl)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Beat until well combined.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the grated zucchini and carrots until evenly distributed. Fold in the chocolate chips, if using.
- If making the cream cheese swirl, in a small bowl, beat together the softened cream cheese, sugar, egg yolk, and vanilla extract until smooth.
- Pour the brownie batter into the prepared baking pan. Drop spoonfuls of the cream cheese mixture over the batter and swirl with a knife or chopstick.
- Bake for 25 30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
- Let the brownies cool completely in the pan before cutting into squares.
