Quick and easy stir fry beef wraps, perfect for a weeknight meal! Tender beef, crisp veggies, and a flavorful sauce all wrapped in a warm tortilla.

- 1 pound beef sirloin, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 1 tablespoon vegetable oil
- 1 onion, sliced
- 1 bell pepper (any color), sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (optional)
- 8 flour tortillas, warmed
Instructions
- In a medium bowl, combine the beef with 2 tablespoons soy sauce, 1 tablespoon cornstarch, 1 teaspoon sesame oil, and 1/2 teaspoon ground ginger. Marinate for 15 minutes.
- Slice the onion and bell pepper. Cut the broccoli into florets, and julienne the carrot. Mince the garlic and grate the ginger.
- In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons brown sugar, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and 1/2 teaspoon red pepper flakes (if using).
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef and stir fry until browned and cooked through, about 3-5 minutes. Remove from the skillet.
- Add the sliced onion, bell pepper, broccoli florets, and carrot to the skillet. Stir fry for about 5-7 minutes, until tender-crisp.
- Add the minced garlic and grated ginger to the skillet and stir fry for another minute, until fragrant.
- Return the beef to the skillet with the vegetables. Pour the sauce over the mixture and stir well to combine. Bring to a simmer and cook for a few minutes, until the sauce has thickened slightly.
- Warm the flour tortillas.
- Spoon the beef and vegetable stir fry mixture into the center of each warm tortilla. Fold the sides of the tortilla inward and roll it up tightly. Serve immediately.
