  • 1 pound beef sirloin, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 1 bell pepper (any color), sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 flour tortillas, warmed

Instructions

  1. In a medium bowl, combine the beef with 2 tablespoons soy sauce, 1 tablespoon cornstarch, 1 teaspoon sesame oil, and 1/2 teaspoon ground ginger. Marinate for 15 minutes.
  2. Slice the onion and bell pepper. Cut the broccoli into florets, and julienne the carrot. Mince the garlic and grate the ginger.
  3. In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons brown sugar, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and 1/2 teaspoon red pepper flakes (if using).
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef and stir fry until browned and cooked through, about 3-5 minutes. Remove from the skillet.
  5. Add the sliced onion, bell pepper, broccoli florets, and carrot to the skillet. Stir fry for about 5-7 minutes, until tender-crisp.
  6. Add the minced garlic and grated ginger to the skillet and stir fry for another minute, until fragrant.
  7. Return the beef to the skillet with the vegetables. Pour the sauce over the mixture and stir well to combine. Bring to a simmer and cook for a few minutes, until the sauce has thickened slightly.
  8. Warm the flour tortillas.
  9. Spoon the beef and vegetable stir fry mixture into the center of each warm tortilla. Fold the sides of the tortilla inward and roll it up tightly. Serve immediately.
