Ingredients

  • 1 pound cod fillets, skinless and boneless, cut into 1-inch pieces
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1/2 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1 pound pasta (spaghetti, linguine, or fettuccine)
  • Salt, for pasta water
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Instructions

  1. 1. In a medium bowl, combine the cod pieces with soy sauce, cornstarch, ginger, and minced garlic. Toss to coat evenly. Let it marinate for at least 10 minutes.
  2. 2. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.
  3. 3. In a small bowl, whisk together soy sauce, oyster sauce, honey, rice vinegar, sesame oil, water, and cornstarch. Set aside.
  4. 4. Heat vegetable oil in a large wok or skillet over high heat. Add the bell peppers, broccoli, and carrots. Stir fry for 3-4 minutes, until crisp tender. Add the minced garlic and grated ginger and stir fry for another minute until fragrant.
  5. 5. Add the marinated cod to the wok and stir fry until cooked through and flaky, about 3-5 minutes. Be careful not to overcook the cod!
  6. 6. Pour the sauce over the cod and vegetables. Bring to a simmer and cook until the sauce has thickened, about 1-2 minutes.
  7. 7. Add the cooked pasta to the wok and toss to coat evenly with the sauce.
  8. 8. Garnish with sesame seeds and chopped green onions, if desired. Serve immediately.
