  • 2 cups water
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 inch ginger, peeled and thinly sliced
  • 2 cloves garlic, minced
  • 1 pound salmon fillet, skin removed and cut into 1 inch cubes
  • 1 tablespoon olive oil
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro

Instructions

  1. In a large pot, combine broth, water, soy sauce, vinegar, sesame oil, ginger, and garlic. Simmer.
  2. In a skillet, heat oil, add bell pepper, broccoli, and carrots. Stirfry 5-7 minutes
  3. Add salmon to skillet and stirfry 3-5 minutes
  4. Pour contents of skillet into simmering broth
  5. Simmer combined ingredients for 5-10 minutes
  6. Ladle into bowls, add garnishes, and serve hot
