- 1 pound salmon fillet, skin removed and cut into 1 inch cubes
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ginger, grated
- 1 clove garlic, minced
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 2 cups water
- 1 cup mushrooms, sliced
- 1 cup bok choy, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce (or more to taste)
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- In a medium bowl, combine the salmon cubes with soy sauce, sesame oil, ginger, and garlic for at least 15 minutes.
- Heat the vegetable oil in a large pot or Dutch oven over medium high heat. Stir fry the marinated salmon for 2 to 3 minutes, or until it is lightly browned on all sides. Remove the salmon from the pot and set aside.
- Add the onion, carrots, and celery to the pot and cook until softened, about 5 to 7 minutes.
- Pour in the chicken broth and water. Bring it to a boil and then reduce the heat to a simmer.
- Add the mushrooms and bok choy. Simmer for another 5 to 7 minutes, or until the vegetables are tender.
- Gently return the stir fried salmon to the pot.
- Stir in the cilantro, rice vinegar, and soy sauce. Taste and adjust the seasoning with salt and pepper as needed.
- Simmer for another 2 to 3 minutes to allow the flavors to meld.
- Serve hot and enjoy!
