  • 1 pound salmon fillet, skin removed and cut into 1 inch cubes
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ginger, grated
  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce (or more to taste)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the salmon cubes with soy sauce, sesame oil, ginger, and garlic for at least 15 minutes.
  2. Heat the vegetable oil in a large pot or Dutch oven over medium high heat. Stir fry the marinated salmon for 2 to 3 minutes, or until it is lightly browned on all sides. Remove the salmon from the pot and set aside.
  3. Add the onion, carrots, and celery to the pot and cook until softened, about 5 to 7 minutes.
  4. Pour in the chicken broth and water. Bring it to a boil and then reduce the heat to a simmer.
  5. Add the mushrooms and bok choy. Simmer for another 5 to 7 minutes, or until the vegetables are tender.
  6. Gently return the stir fried salmon to the pot.
  7. Stir in the cilantro, rice vinegar, and soy sauce. Taste and adjust the seasoning with salt and pepper as needed.
  8. Simmer for another 2 to 3 minutes to allow the flavors to meld.
  9. Serve hot and enjoy!
