Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon ginger, grated
  • Salt and black pepper to taste
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 ounces spaghetti or linguine
  • Water for boiling
  • Salt for boiling water

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.
  2. Prepare the shrimp: In a large skillet or wok, heat the olive oil over medium high heat. Add the minced garlic and grated ginger and cook for about 30 seconds, or until fragrant, being careful not to burn.
  3. Cook the shrimp: Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Season with salt and black pepper to taste. Remove the shrimp from the skillet and set aside.
  4. Stir fry the vegetables: In the same skillet, add the sliced bell peppers, broccoli florets, and sliced carrots. Stir fry for 5-7 minutes, or until the vegetables are tender crisp.
  5. Make the sauce: In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes (if using).
  6. Combine Everything: Pour the sauce over the stir fried vegetables and cook for 1-2 minutes, or until the sauce has thickened slightly. Add the cooked pasta and shrimp to the skillet and toss to coat.
  7. Serve: Serve immediately and enjoy!
