- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 cup snow peas
- 1/4 cup sliced water chestnuts
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (optional)
- 6 large tortillas (flour or whole wheat)
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- Sriracha or other hot sauce, to taste (optional)
Instructions
- Pat the shrimp dry with paper towels.
- Heat olive oil in a large skillet over medium-high heat. Add bell peppers, snow peas, and water chestnuts. Stir fry for 3-4 minutes.
- Add minced garlic and grated ginger and cook for 30 seconds. Add shrimp and cook for 2-3 minutes per side.
- In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, and red pepper flakes (if using).
- Pour the sauce over the shrimp and vegetables. Stir to coat and cook for another minute.
- Warm the tortillas. Place a portion of the shrimp stir fry in the center of each tortilla.
- Sprinkle with cilantro and green onions. Drizzle with sriracha, if desired.
- Fold in the sides and roll it up tightly. Serve immediately.
