  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 (5 ounce) cans tuna in water, drained
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Cooked rice or pasta, for serving

Instructions

  1. Heat the olive oil in a large skillet or pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and bell pepper and cook for another 2-3 minutes, until fragrant and slightly tender.
  3. Pour in the diced tomatoes and vegetable broth. Stir in the oregano and red pepper flakes (if using). Bring to a simmer.
  4. Reduce heat to low and simmer for 10 minutes, allowing the flavors to meld.
  5. Gently stir in the drained tuna and parsley. Season with salt and pepper to taste. Cook for another 2-3 minutes, until the tuna is heated through. Be careful not to overcook the tuna.
  6. Serve hot over cooked rice or pasta.
