A quick and easy stir fry tuna stew made with simple ingredients in under 30 minutes!

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup vegetable broth
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 2 (5 ounce) cans tuna in water, drained
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Cooked rice or pasta, for serving
Instructions
- Heat the olive oil in a large skillet or pot over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic and bell pepper and cook for another 2-3 minutes, until fragrant and slightly tender.
- Pour in the diced tomatoes and vegetable broth. Stir in the oregano and red pepper flakes (if using). Bring to a simmer.
- Reduce heat to low and simmer for 10 minutes, allowing the flavors to meld.
- Gently stir in the drained tuna and parsley. Season with salt and pepper to taste. Cook for another 2-3 minutes, until the tuna is heated through. Be careful not to overcook the tuna.
- Serve hot over cooked rice or pasta.
