Ingredients

  • 1 tablespoon sesame oil
  • 1 pound cooked turkey, shredded or diced
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 4 cups chicken or turkey broth
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch, mixed with 1 tablespoon water
  • 4 ounces rice noodles or egg noodles, cooked
  • 2 green onions, sliced, for garnish
  • Sesame seeds, for garnish
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large pot or Dutch oven over medium high heat.
  2. Add the turkey and stir fry for 2 to 3 minutes, until lightly browned.
  3. Add the onion, garlic, and ginger and cook for 2 minutes, until fragrant.
  4. Add the bell peppers, carrots, and celery and stir fry for 5 minutes until the vegetables are slightly tender.
  5. Pour in the broth, soy sauce, and rice vinegar. Bring to a simmer.
  6. Stir in the cornstarch slurry to thicken the soup.
  7. Add the cooked noodles and stir until heated through.
  8. Season with salt and pepper to taste.
  9. Ladle the stir fry turkey soup into bowls and garnish with green onions and sesame seeds.
