  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers (any color)
  • ½ cup sliced mushrooms
  • ½ cup snow peas
  • 1/4 cup chopped green onions
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sesame seeds, sriracha, cilantro (optional)

Instructions

  1. Heat sesame oil in a large pot over medium heat. Add ginger and garlic; stir fry for 30 seconds.
  2. Add carrots, bell peppers, and mushrooms; stir fry for 3-5 minutes.
  3. Pour in broth and soy sauce; bring to a simmer for about 5 minutes.
  4. Stir in turkey and broccoli; cook for 3-5 minutes.
  5. Whisk cornstarch and water; gradually add to the soup, stirring until thickened.
  6. Add snow peas and green onions; cook for 1 minute.
  7. Serve and garnish with sesame seeds, sriracha, or cilantro.
