- 2 cups cooked turkey, shredded or cubed
- 6 cups chicken or turkey broth
- 2 tablespoons soy sauce, low sodium
- 1 tablespoon sesame oil
- 1 tablespoon ginger, freshly grated
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced bell peppers (any color)
- ½ cup sliced mushrooms
- ½ cup snow peas
- 1/4 cup chopped green onions
- 1 tablespoon cornstarch
- 2 tablespoons water
- Sesame seeds, sriracha, cilantro (optional)
Instructions
- Heat sesame oil in a large pot over medium heat. Add ginger and garlic; stir fry for 30 seconds.
- Add carrots, bell peppers, and mushrooms; stir fry for 3-5 minutes.
- Pour in broth and soy sauce; bring to a simmer for about 5 minutes.
- Stir in turkey and broccoli; cook for 3-5 minutes.
- Whisk cornstarch and water; gradually add to the soup, stirring until thickened.
- Add snow peas and green onions; cook for 1 minute.
- Serve and garnish with sesame seeds, sriracha, or cilantro.
